Mini Clementine Cakes

My daughter is doing Christmas Finger Food for her Food Technology GCSE. She would like to do Nigella's Clementine Cake in a mini version. Could we adapt the recipe to work in a mini muffin tin?
Our answer
Nigella's Clementine Cake is a very popular gluten free cake that is usually made in a 20cm/8-inch springform tin (pan). Unfortunately we have encountered problems when converting gluten free cakes from large to mini versions as these cakes have a tendancy to sink slightly in the centre and in mini form this can sometimes be exaggerated. We wonder if it may be better to divide the mixture between two 20cm springform pans and bake thinner cakes. You could then cut out small canape size cakes using a plain round cutter of a suitable size. The cakes would likely take around 25-35 minutes to bake.
As an alternative we suggest looking at Nigella's Mini Lime Syrup Sponges on p242 of Domestic Goddess. This recipe should make 12 cupcakes or about 24-30 mini cupcakes and you could use clementines instead of the lime or, as Nigella suggests, a combination of orange and lime juice to make a seville orange substitute. Mini pavlovas are also often popular and can be topped with seasonal and colourful fruits, such as pomegranate seeds and clementine segments. Nigella's Mini Pavlova recipe (from Domestic Goddess and on the Nigella website) gives the meringue base which can also be piped into smaller, finger food sizes.
