Now this is what I call a cocktail!
For all that genever means juniper in Dutch, that it’s often known as Dutch gin, and is, in fact, a precursor to gin, it doesn’t actually taste like gin. The “Zeer Oude”, that’s to say Very Old, Genever (and ‘old’ here doesn’t refer to its age, but the method that’s used to make it) I use here in fact tastes more like vodka with a drop of malt whisky in it. And that’s indeed what you could replace it with, should you not have any Old Genever to hand.
I wish I could say that I came up with this, but credit for both the cocktail and its brilliant appellation must go to Lee Clarke and Difford’s Guide.

- 30 millilitres Very Old Bols Genever
- 30 millilitres cointreau
- 30 millilitres dry white vermouth
- 1 dash orange bitters
- ice for shaking
- 2 tablespoons Very Old Bols Genever

- 2 tablespoons dry white vermouth

- ice for shaking
Method
- Shake together with ice in a cocktail shaker, pour into a coupe or Martini glass then knock it back or sip, as wished, to tingling effect!
