Full question

I have some non-metallic mini cake loaf containers. Could I use them for the Mini Meatloaves? These containers look good for presentation and are easy to transport.

Our answer

Nigella's Mini Meatloaves (from NIGELLA EXPRESS) are small, individual meatloaves that are formed by hand. Baking them this way helps to brown most of the surface of the loaves, giving them a good crust.

You can bake the mixture in mini loaf pans but only the tops will brown. Also the baking time could be longer as the size may be slightly different to the loaves in the recipe and the sides of the containers will shield the mixture slightly from the heat of the oven. Make sure that the loaves are fully cooked through before removing them from the oven. You can insert a skewer or the tip of a small knife into the centre of each loaf and check that the juices that seep out are running clear, or use a probe thermometer to check the temperature at the centre of the loaves. When they are fully cooked the internal temperature should be at least 75°C/165°F.
