Mixing Christmas Pudding

Full question

I forgot to add the soft dark brown sugar to my Ultimate Christmas Pudding mixture until the very end of mixing. Will it be ok?

Our answer

Nigella's Ultimate Christmas Pudding (from NIGELLA CHRISTMAS) has a batter made from dried fruits that have been macerated in sherry, plus eggs, suet, sugar, flour, apple, lemon zest, breadcrumbs and spices. The ingredients are simply mixed together, with the macerated fruits being added towards the end for ease of stirring.

If you did not add the sugar until the end of mixing then it should be fine, as long as the pudding was mixed enough to make sure that the sugar was evenly distributed. As dark brown sugar has fairly small granules it dissolves quite quickly once in the batter. If the sugar was slightly lumpy and there are a few lumps of sugar in the batter then they will melt to form nuggets of hard sugar inside small air pockets in the pudding, but the pudding will still be fine to eat.
