Muscovado Sugar For Chocolate Cake

Full question

I wanted to make the Dark and Sumptuous Chocolate Cake. Can I substitute dark brown sugar with muscovado and can I use white vinegar instead of white wine vinegar? Also are the measurements the same.

Nigella's Dark And Sumptuous Chocolate Cake (from SIMPLY NIGELLA) is an easy to make chocolate cake that is also vegan. Nigella uses soft dark brown sugar as it adds a caramel note and enhances the depth of the chocolate flavour. Muscovado sugar is an unrefined sugar that is very similar to dark brown sugar and can be used instead of dark brown sugar in the cake. In the UK you can buy both light and dark muscovado and you should use the dark version.

For white vinegar we assume that it is distilled white vinegar and this would be fine to use. The acid is needed to create a reaction with the bicarbonate of soda so that the cake rises. You could also use fresh lemon juice instead if you need a completely alcohol-free option. For both the muscovado sugar and vinegar or lemon juice the amounts are the same as the amounts used in the recipe and do not need to be changed.
