Full question
I would like to make the Torta Alla Gianduia (Nutella Cake) as a birthday cake and would like to make the cake in advance and then ice on the day. Can I make it in advance and if so how should I store it?
Our answer
Nigella's Nutella Cake (from HOW TO BE A DOMESTIC GODDESS) is a moist, gluten-free cake made with Nutella spread and ground hazelnuts. The cake will keep for up to 5 days, but to be at its best we suggest making the cake up to 3 days in advance and then storing it without the icing in an airtight container in a cool place. The cake can also be frozen once cool; we suggest leaving the cake on the pan base, wrapping it in a double layer of clingfilm (plastic wrap) and a layer of foil and freezing it for up to 3 months. To thaw the cake, unwrap it and leave on a wire rack at room temperature for about 3 hours.
The nuts can be toasted up to 3 days in advance and stored in an airtight container in a cool place. It is not worth making the icing in advance as you would have to warm it again to spread it on the cake. Ice the cake the day that you are going to eat it, so that the icing is shiny and the nuts are crunchy. The nuts will start to soften slightly if they are stored on the cake for more than a day or so.
