Nutella Cheesecake in Smaller Sizes

Full question

The recipe for the Nutella Cheesecake is for a large amount of people. I just wondered what the ingredients would be for 6 or even individual ones? I realise I could just divide everything in half but sometimes this just doesn't work! Many thanks Karen

Our answer

Fortunately as Nigella's Nutella Cheesecake isn't baked it is much easier to scale the recipe down to smaller sizes as you don't need to worry about baking times. However we would not recommend using a half quantity in the 23cm/9-inch pan as the cheesecake and base would be far too thin.

A half quantity of the cheesecake would probably be fine in a 15cm/6-inch springform pan and a three-quarters quantity in a 17cm/7-inch pan. Individual cakes could be quite tricky as most springform pans will be too big for individual portions and if you put the cheesecake mixture into muffin pans then it will be tricky to get them out. If you do want to make 6 individual portions we would suggest that you make a half quantity of the cheesecake and put it in small glasses or tumblers, with the crumbs in the base and the cheescake mixture on top. Once the cheesecake has chilled then you can serve it in the glasses.
