Nuts In Ginger And Walnut Carrot Cake

Full question

Walnuts or any nuts are not a household favorite, due to allergies. What can I substitute instead of walnuts? Or can I omit them altogether?

Our answer

Nigella's Ginger And Walnut Carrot Cake (from AT MY TABLE) is different to the usual spongy style carrot cakes. It is slightly firmer and studded with nuggets of spicy crystallised ginger and crunchy walnuts.

If nuts are ruled out due to allergies then we would suggest omitting them completely, as it is difficult to suggest a good replacement. The nuts are a "mix in" rather than integral to the cake mixture so this should not affect the way the cake bakes, but the texture of the baked will be slightly more uniform. For the decoration you can scatter a little extra chopped crystallized ginger over the top of the cake, guided by how much your family likes ginger.
