Can the batter for the Orange Breakfas Muffins be made in advance? And if so how long will it last in the fridge?
Our answer
Nigella's Orange Breakfast Muffins (from Nigella Bites) are, like most muffins, best on the day that they are made. Unfortunatey the batter should be baked as quickly as possible after it has been mixed, as the raising agents start working as soon as the liquid is added and expire relatively quickly. If the batter is left for too long then you will end up with muffins that do not rise much and are on the heavy side. Making the batter is fairly quick and you can measure out the ingredients the night before, keeping the milk and juice in the fridge and the rest on the counter top. Then melting the butter and mixing the muffins is very quick and can be done while the oven is heating up.
If you have leftover muffins then they can be stored in an airtight container for 1 to 2 days. You can warm the muffins in an oven preheated to 150c/300F for about 8 minutes. The muffins can also be frozen for up to 3 months. Wrap each muffin individually in clingfilm (plastic wrap) and then put in a resealable bag or airtight container. Thaw the muffins on a wire rack at room temperature for abiut an hour and warm as above.
