Full question
Can I make the Polenta Triangles ahead of time up to the point where they are chilled? Will they be ok in fridge for 8 hours?
Our answer
Nigella's Polenta Triangles With Chilli Tomato Sauce (from NIGELLISSIMA) are great as a canape or appetizer with drinks, but they are also quite versatile and can be served for breakfast, as an alternative to hash browns, or even as side dish.
The polenta triangles can be made ahead. Once the slab of cooked polenta has set, cut it into the triangles, put them on a baking sheet and cover tightly with clingfilm. Refrigerate for up to 3 days. Alternatively you can freeze the triangles on parchment-lined baking sheets until solid, then transfer to resealable plastic bags and store in the freezer for up to 3 months. The triangles should be refrigerated or frozen within 2 hours of making. Reheat the triangles as directed in the recipe, allowing about 5 minutes extra if cooked from chilled and about 10 minutes extra if cooked from frozen.
