Hi! Nigella's little Potato Cakes are awesome! I now want to make them for a friend so they need to be gluten free. Can you help me what to use instead of the flour mentioned in the recipe? Thank you!

Nigella's Potato Cakes with Smoked Salmon (from NIGELLA EXPRESS) are very easy to make blini-style pancakes that are made using instant potato flakes. The mixture is bound together with a little flour and as the flour quantity is quite small it may be possible to replace it with a gluten free alternative.
We would suggest using potato starch instead and if this is not possible then cornflour (cornstarch). However these refined starches absorb more liquid than regular flour so you may need to use less of them. We would suggest using 2 tablespoons of the starch when you first mix up the pancake batter and stir in an extra tablespoon if the mixture seems to runny or thin. The pancakes will also be slightly fragile so make them in a size that is easy to lift out with a spatula. Please note that as we have not tried this variation we are unable to guarantee the results.
