Full question

The recipe for Pumpkin And Goat's Cheese Lasagne calls for white wine or vermouth in the recipe and I do not drink alcohol. What do I use as an alternative? Or can I just replace with vegetable stock?

Also, I don't like goat's cheese so can I substitute it with another cheese?

Nigella's Pumpkin And Goat's Cheese Lasagne is made with layers of pumpkin, tomato and a stir-together cheese sauce and topped with mozzarella cheese. It is a lighter, vegetarian version of a traditional lasagne. The pumpkin is cooked with a little water and wine or vermouth but the wine or vermouth can be replaced either with extra water or a vegetable stock. If you use the stock then taste the cooked pumpkin before seasoning, as the stock may already contain salt.

The goat's cheese in the recipe is the soft type of goat's cheese and adds a little tang to the sauce, which is a nice contrast to the pumpkin filling. It is unlikely that you will actually notice the flavour of the cheese in the finished lasagne but if you prefer to avoid it then we would suggest using a full-fat cream cheese (such as Philadelphia) as an alternative, though it may also be possible to use extra ricotta as long as you use full-fat (whole milk) ricotta in the recipe. However, we would mention that as we haven't tried the sauce with these ingredients, we are unable to guarantee the results.
