I'm confused about the quantity of bananas for the Chocolate Banana Muffins. Can you specify a weight for the banana? What is the general weight of a banana and is it weighed skin in or off? In my experience, if there is too much banana then the baked goods are raw in the middle. Any advice please?

Nigella's Chocolate Banana Muffins uses 3 ripe bananas. When size isn't given we would suggest using medium-sized bananas. The weight of bananas can vary a bit but we consider a medium banana to weigh approximately 150g/6 ounces when weighed with the skin on.
For the Chocolate Banana Muffins 3 medium bananas would weigh approximately 450g/1 pound. For US measurements we try to give the cup measure of the peeled and mashed bananas and for this recipe you would need 1⅓ cups. We have updated the on-line recipe with this extra information.
