Raw Prawns For Thai Noodles

Asked by JaneMelbourne. Answered on 10th March 2018

Full question

I've recently made Nigella's Thai-style prawn and rice noodle stir-fry from the Nigella Quick Collection app. The recipe calls for fresh or frozen cooked, peeled prawns. I was just wondering if these prawns could be substituted for fresh or frozen raw prawns, cooked for a little longer? I have raw prawns on hand more often.

Our answer

Nigella's Thai Noodles With Cinnamon And Prawns (from the NIGELLA QUICK COLLECTION APP) is a quick stir fry influenced by the noodle dish Pad Thai. Nigella uses cooked, peeled (shelled) prawns (shrimp) for ease. It is possible to use raw, peeled prawns in the stir fry. If they are frozen then they should be thoroughly defrosted before using, following the instructions on the package.

We would suggest that you use small raw prawns as these will cook quickly and then the prawns can be added to the pan at the same time as the cooked ones would be added and cooked for 3-4 minutes. The prawns should be pink and just cooked all of the way through. If you only have large prawns then we would suggest stir frying the prawns separately for 2-3 minutes, until just cooked, before adding them to the other ingredients.
