Rice Flour For Scented Citrus Cake
Asked by the_bexster. Answered on 23rd February 2018
Full question
I want to make the Scented Citrus Cake, but I don’t have any rice flour (or the opportunity to get some before cake needs to be made). Can I use plain flour instead? Thanks!
Our answer
Nigella's Scented Citrus Cake (from AT MY TABLE) is a gluten-free cake made with rice flour. The rice flour gives the cake its fine crumb and tender texture. Unfortunately it is not possible to use plain (all-purpose) flour as an alternative as plain flour absorbs liquid much more quickly than rice flour and it will change the texture of the cake, making it slightly dry.
It may be possible to use fine ground cornmeal or fine polenta (but not instant polenta) as an alternative to rice flour as they also absorb liquids slowly. However as we have not tried the cake with this alternative we are unable to guarantee the results.
