In Nigella's new Gluten Free Banana Bread recipe I was wondering if instead of using rice flour and almond meal, can I use all almond meal? Will that still work?
Our answer
Nigella's Gluten-Free Banana Bread has universal appeal and will be enjoyed by those who do not need to avoid gluten, as well as those who do. The batter uses a combination of almond meal (ground almonds or almond flour) and rice flour as this, combined with the yogurt, gives the bread a good texture and fine crumb.
Unfortunately we would not recommend replacing the rice flour with extra almond meal as the nuts contain oil and the extra oil will make the bread slightly heavy and greasy. Rice flour can be found in natural food stores and also can be bought on-line (if it helps then look out for Bob's Red Mill as this is distributed in many countries, though other brands are also fine for this recipe). Nigella's preference is to use rice flour, though we suspect also that the rice flour could be replaced with a gluten-free plain flour or all-purpose baking mix (one without raising agents). However, as we have not tested the bread with this gluten free flour option we are unable to guarantee the results.
