Line a 2lb/900g loaf tin with silicon paper, leaving plenty over the edge to 'tent' the top. Cream butter and sugar together. Add egg a little at a time beating mixture well. Add the mashed bananas and beat together well. Stir in the flour and nuts. Pour into the lined bread tin. Lift the excess silicon paper and make a loose tent over the top of the mixture to prevent burning. Bake at gas 4, 180 deg C. or 350 deg F for approx 1 to 1 1/2 hours. Check if cooked with a skewer. Remove from the oven when cooked, and cool in the silicon paper on a rack. I leave wrapped in the paper on to keep fresh.
