Banana Tea Bread

Introduction

A delicious tea bread, ideal for using up over ripe bananas. With a very flexible recipe. Freezes well.

Ingredients

Serves: Approx 14 slices.

  • 6 bananas (ripe and roughly mashed)
  • 3 ounces butter
  • 4 ounces superfine sugar
  • 2 eggs
  • 7 ounces self-rising flour
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • 4 ounces coarsely chopped nuts

Method

  • Line a 2lb/900g loaf tin with silicon paper, leaving plenty over the edge to 'tent' the top.
  • Cream butter and sugar together. Add egg a little at a time beating mixture well.
  • Add the mashed bananas and beat together well. Stir in the flour and nuts.
  • Pour into the lined bread tin. Lift the excess silicon paper and make a loose tent over the top of the mixture to prevent burning.
  • Bake at gas 4, 180 deg C. or 350 deg F for approx 1 to 1 1/2 hours.
  • Check if cooked with a skewer. Remove from the oven when cooked, and cool in the silicon paper on a rack. I leave wrapped in the paper on to keep fresh.
  • Additional Information

    Delicious on its own, or served spread with butter.
