Hi! I'd love to make Nigella's Roast Goose but don't see anything in the recipe about seasoning the bird. Should I sprinkle with salt before roasting? Thanks.

Nigella's Roast Goose with Pear And Cranberry Stuffing (from NIGELLA CHRISTMAS) has a stuffing made from dried fruits, breadcrumbs, pecans and maple syrup. The stuffing is seasoned with sea salt flakes (if you don't have salt flakes use half a teaspoon of free-flowing sea salt) and this will keep the meat moist, as well as seasoning the goose to an extent. However seasoning with salt is a very personal thing - people's desire for salt, and tolerance to it, varies enormously. Consequently Nigella prefers to let people season many dishes to their own taste.
