Can the golden syrup in this recipe be replaced by honey and the fleur de sel with sea salt?

Our answer

Nigella's Salted Caramel Sauce is made without the fuss of boiling sugar to make a caramel and instead uses a combination of butter, sugar, cream and golden syrup. Golden syrup is sweet and flavourless and also helps to prevent the sauce from crystallising as it is an invert sugar.

Honey is also an invert sugar but it has a flavour of its own and unfortunately it will affect the taste of the sauce. If you cannot buy golden syrup then agave nectar or corn syrup are good alternatives for the sauce. Glucose syrup is also a possibility if you can buy it in larger containers. If you do wish to try making the Salted Caramel Sauce with honey then we suggest buying a liquid, light coloured and mildly flavoured variety. Sea salt could be used instead of fleur de sel but bear in mind that the grains of salt can be different sizes so we suggest adding different salt a pinch at a time and adjusting for your own taste.
