Could I substitute cider vinegar for the red wine vinegar in the Sicilian Vinegar Chicken recipe?

Nigella's Sicilian Vinegar Chicken (from Nigella Summer) braises a jointed chicken in a combination of chicken stock, white wine and red vinegar. The vinegar has a dual purpose, it adds flavour but also its acidity helps to tenderize the chicken.
Cider vinegar is milder in flavour than red wine vinegar so from a flavour perspective it will not be the same dish, though the tenderizing effect of cider vinegar will be the same as for red wine vinegar. Using cider vinegar will create a slightly different dish and our feeling is that it could still be very nice. If using cider vinegar you can add the tomatoes to the sauce, or you could instead try reducing the sauce (by boiling for a few minutes) and then finishing the sauce with some double cream.
