Full question

Can I make the Old Fashioned Chocolate Cake as one cake and how long will the cooking time be? I've made it as two but would like to make as one whole cake.

Our answer

Nigella's Old Fashioned Chocolate Cake is a two-layer chocolate sponge cake. It is usually baked in two 20cm (8-inch) sandwich tins (cake pans) however we suspect that it would be possible to bake the cake in a 20cm (8-inch) springform pan to make one cake. The cake would need to be baked in a 20cm (8-inch) springform pan as a regular sandwich tin would be too shallow. The pan should be greased and the base lined with baking parchment (parchment paper).

The cake should still be baked at 180°C (350°F) and is likely to take about 50 minutes to 1 hour, but we would suggest that you start checking at 35 minutes as ovens do vary. Also to ensure even baking you may like to rotate the cake pan by a one half turn after 35 minutes if it is not ready to come out of the oven. Once baked the cake should be risen, firm on top and slightly pulling away from the sides of the pan. A cake tester inserted into the centre of the cake should come out clean. Sit the pan on a wire rack and let the cake cool for 20-30 minutes before unmoulding it and letting it cool completely on the wire rack. We would however mention that as we have not tried the cake in this form we are unable to guarantee the results.
