Slow Cooked Chicken In A Pot

Asked by Lisalou55. Answered on 6th April 2019

Full question

My casserole may not be big enough to fit the chicken I have, but my slow cooker definitely will be. Do you think it would work if I use the slow cooker after browning the chicken?

Our answer

Nigella's Chicken In A Pot With Lemon And Orzo is a one pot dish that requires very little attention. The chicken is braised in water with lemon and chilli, which turns into a stock that is absorbed by the orzo.

It is possible to cook the chicken in a slow cooker, though as models vary we would suggest following the guidelines that come with your cooker for times and temperatures. Pasta can be quite difficult to cook in a slow cooker, particularly to find a balance between cooked and mushy. Again your slow cooker may have guidelines to help, but if not then add the pasta 30 minutes before the end of the cooking time and turn the heat up to high. Test the pasta after 30 minutes and allow extra cooking time if necessary. If your casserole (Dutch oven) is not large enough you could also use a large roasting tin and cover it with a double layer of foil, sealing the foil as tightly as possible around the edges of the tin. As liquid will evaporate more easily with a foil cover you may need to add extra water before adding the orzo, topping it up to the same level as you had just before the chicken went into the oven.
