Spanish Chicken Without Orange Zest

Asked by soupersuzy. Answered on 17th July 2020

Full question

I have made Nigella's Spanish Chicken many times, and delicious it is too! However I always seem to be without an orange. Could I use something else, maybe lime, lemon or even rose water?

Our answer

Nigella's Spanish Chicken With Chorizo And Potatoes (from KITCHEN) is a one dish traybake that is a stress-free way to feed a large crowd. The paprika infused oil of the chorizo helps to flavour and crisp up the potatoes. A little orange zest is added to help to lift the flavours.

If you don't have an orange handy then you can certainly just leave it out. Clementine zest would be the closest alternative, though if the fruits are small then you may need to use two clementines. Otherwise we would suggest using lemon zest as we feel that the flavour of the lemon would fit better with the warm spices than the zest of a lime. Rose water may be a little too floral and is likely to evaporate in the oven if sprinkled over the surface of the traybake. You could use the juice of the lemon in a vinaigrette, to dress a green salad to go alongside.
