Full question
I love the Spinach And Coconut Soup recipe with all my heart. Thank you! I DO have a question - I have a batch of really lovely veggie broth with me, would it be okay to use boiled broth instead of plain water? I made the broth with shiitake, spring onion, very little chives, some cabbage, and the like. Thank you.
Our answer
Nigella's Spinach And Coconut Soup is a quick and satisfying soup that can be made from items that you have in the larder and freezer. It uses a combination of water and stock (bouillon) powder.
Home-made vegetable stock or broth could certainly be used for the soup and you would add it to the pot when you normally add the water. You will probably want to omit the stock powder, depending on the strength of your broth, and as home-made broth is usually unsalted just make sure that you taste and adjust the seasoning before serving the soup.
