What is the best way to store the Chocolate Peanut Butter Cake please? Would it be OK kept at room temperature or does it need to be kept in the fridge? Thank you.

Our answer

Nigella's Chocolate Peanut Butter Cake (from COOK, EAT, REPEAT) is a chocolate sponge sandwiched and iced with a whipped peanut butter frosting. The frosting contains a little fresh cream, but as it is a small amount and is combined with butter and sugar, the cake does not need to be refrigerated.

The assembled cake can be stored in an airtight container at room temperature for up to 5 days. The sponge layers (without frosting) can be frozen for up to 3 months, individually wrapped in a double layer of food wrap and a layer of foil. Unwrap and defrost at room temperature for 2-3 hours. Please note also that wherever possible we add storage information at the bottom of each of Nigella's own recipes, under the heading "Additional Information".
