Storing Chocolate Pear Pudding

Full question

Can the Chocolate Pear Pudding be frozen before or after cooking? And how long would you reduce cooking time if making individual portions please? Such as small individual pie dish which would hold 2/3 pear halves per dish.

Our answer

Nigella's Chocolate Pear Pudding (from NIGELLA EXPRESS) is a quick to make and cozy dessert with drained and canned pears surrounded by a chocolate sponge. Leftovers will keep for up to 3 days in the fridge. If you were to freeze the pudding then we would prefer to do this after baking and you can freeze individual portions in airtight containers for up to 1 month, then thaw them in the fridge overnight before reheating in a microwave.

If you were making a half quantity of the recipe then the baking time is likely to be around 20 minutes, though we suggest checking carefully after 18 minutes. The sponge should be risen and firm on top and a cake tester inserted into the centre should come out clean or with a few damp crumbs attached (but not raw cake batter). Ovens vary so the baking times are always approximate.
