Just wondering if I can freeze the Minestrone In Minutes for reheating, especially if I use rice instead of pasta?

Nigella's Minestrone In Minutes (from [NIGELLA EXPRESS](/books/nigella express)) is a quick and comforting soup made with store cupboard ingredients. The soup will keep in the fridge for up to 3 days and it is possible to freeze it. Cool and chill the soup as quickly as possible and within 2 hours of making.

If freezing the soup then put the soup in resealable containers, freeze for up to 3 months and thaw the soup overnight in the fridge. If reheating chilled or defrosted soup then transfer the soup to a saucepan and reheat over a medium heat, stirring occasionally, until boiling. Cool the soup slightly before serving. If the soup is too thick then add a splash or two of water when you reheat it. The recipe uses small pasta shapes called ditalini and as we have not tried to make the soup with rice we would not particularly recommend using this instead of pasta. However you must be extremely careful when handling cooked rice and make sure that you cool and refrigerate it very quickly and reheat it until piping hot.
