Does the icing on Nigella's Old Fashioned Chocolate Cake need to be refrigerated because it has sour cream in it?
Our answer
Nigella's Old Fashioned Chocolate Cake (from FEAST) is a chocolate sponge cake that is covered in a ganache-style icing made from chocolate, butter and sour cream. The butter and chocolate in the icing mean that it is not strictly necessary to refrigerate the cake, even though the icing contains sour cream.
However it is best to keep the cake in a cool place. Once the icing has set, put the cake in an airtight container or cover the cake with a cake dome and store it in a cool, dry place. The cake should keep for up to 5 days. If it is hot weather and you would prefer to refrigerate the cake then remove it from the fridge at least 30 minutes before serving, to allow the cake to come back to room temperature.
