Full question
Hello, I live in Geneva, Switzerland and some of the ingredients are really hard to find here. I am planning to make Nigella's Ice Cream Cake with Butter Scotch Syrup (Nigella Express p222) but can not find Bourbon Biscuits anywhere. Could you please tell me a substitute for them? Many thanks!! Aamna Ajmal
Our answer
Bourbon Biscuits are a popular British cookie made from two crisp rectangular biscuits/cookies sandwiched with a chocolate flavoured cream filling. They are often called Bourbon Creams. The biscuits were originally manufactured in 1910 by a British company called Peek Freans but now most are produced by British supermarkets under their own name, hence they can be difficult to find outside the UK.
The closest substitute is Nabisco's Oreo cookie, particularly the chocolate creme variety. The Oreo cookie is slightly darker than the Bourbon but can be substituted in equal quantities for the Bourbons. Oreos can be bought on-line from the American Food Store (see link below). In the Ice Cream Cake recipe the crushed Bourbons are folded into softened ice cream and some are sprinkled over the top so you could always use your favourite crisp chocolate cookie (such as a double chocolate chip cookie) instead if you are having trouble finding the Oreos too.
