Put all ingredients into mixer or food processor and whiz for 1 minute. Turn into a large tin, greased and lined, square, rectangle or round seems to work all ways. Bake at 160°c for 1 hour
Introduction
This recipe makes a great birthday cake. It holds up to being shaped, it's very moist, large (most important) and a breeze to whiz up. I have lost count of how many times I have made it, but it's always a success.

Ingredients
Serves: 12+
- 2 cups sugar
- 3 eggs
- 1 cup milk
- 1 squeeze lemon (add to milk to create Sour Milk)
- ½ cup unsweetened cocoa
- 7 ounces soft butter
- 2 teaspoons baking soda
- ½ teaspoon vanilla essence
- ¼ teaspoon salt
- 3 cups self-rising flour
- 1 cup strong, boiling coffee

This is the most reliable big cake recipe I've ever used. I have 7 kids, so believe me when I say I have made more chocolate birthday cakes than the average parent, and this recipe is our favorite.
what are the conversions to metric? i.e. how much weight in a cup of flour?
This has become my 'go to' birthday cake recipe. Foolproof and delicious. Even great when I forgot the baking soda once!
