Our answer

Nigella's Clementine Cake (from KITCHEN) uses a 20cm/8-inch springform cake tin and this is mentioned in the first step of the recipe. The cake is gluten free so is quite tender and a springform tin is best for this cake as it is easy to unmould from this type of tin. If you use a tin with a fixed base then the cake can break up as it is removed from the tin. We would also recommend lining the base of the tin with baking parchment (parchment paper) and greasing it well with butter.

The cake should be completely cold before it is unsprung from the tin and you may find it easier to leave the cake on the base of the tin for serving. For other gluten free cake recipes you may like to look at Nigella's gluten free recipe suggestions on the Nigella.com website.
