Totally Chocolate Chip Cookies Soft in Centre

Hi I made Nigella's Chocolate Chip Cookies and also the Totally Chocolate Chocolate Chip Cookies, which turned out really good, but the centre was very soft like a cake. Please advise where I may have gone wrong , thank you in advance ! Best regards Rukhsana

Our answer

Both Nigella's Chocolate Chip Cookies (from Kitchen and on the Nigella website) and Totally Chocolate Chocolate Chip Cookies (from Nigella Express and on the Nigella website) are formed into mounds by using an ice cream scoop. The scoops of dough are then baked but the centre of the cookies will remain soft and slightly cake-like so this is quite normal.

If you are looking for a crisper type of cookie then you could try taking smaller portions of dough, forming it into balls and flattening them slightly (but not too much) and spacing them well apart on baking sheets. However these will still be slightly chewy so if you prefer a more buttery cookie then we would suggest trying Nigella's White Chocolate and Pistachio Biscuits from Domestic Goddess (p205) or the more shortbread-type Christmas Chocolate Biscuits from her book Christmas (p206).
