Chocolate Fudge Upside Down Pudding

Pre-heat oven to Gas 5/ 190°C/ 375°F Butter a 2 pint ovenproof dish Sift the flour, 4oz of the sugar and 1oz of the unsweetened cocoa into a mixing bowl. Beat in the butter and milk Stir in the nuts, dates or choc chips Press into the buttered dish. The mixture is quite stiff and resembles the aforementioned Cow-pat! Mix the remaining unsweetened cocoa and sugar, and dredge over the top of the cow-pat. Pour over the water (Yes, really! I know, it looks a disaster, but have faith, trust me, it DOES work.) Bung it in the oven and give it 35 minutes, until the top is risen with a nice, bubbly crust.
Introduction
This looks like a dreadful mistake until fully baked - my kids used to call it Cow-pat pudding! As it bakes, though, it separates out into a light sponge top with a thick fudge sauce below. It can be served hot or cold, with cream or ice-cream if you really don't care about the calories!

- 6 ounces self-rising flour (sifted)
- 10 ounces superfine sugar (white or brown)
- 2 ounces unsweetened cocoa (sifted)
- 2 ounces butter (softened, plus a little for greasing)
- 4 fluid ounces milk
- 4 ounces chocolate chips (OR chopped nuts, OR chopped dates)
- 14 fluid ounces water (just off the boil)
