Full question
I’ve made the Totally Chocolate Chocolate Chip Cookies in the past and they were amazing. Recently I’ve been making them and they spread quite a bit. Can you please help to avoid them spreading. I like them chunky.
Our answer
Nigella's Totally Chocolate Chocolate Chip Cookies (from NIGELLA EXPRESS) are chocolate cookies loaded with chocolate chips. The cookies will spread a little on baking, though should not end up thin and crisp. There are a few reasons why the cookies may spread. One is to make sure that there is not too much bicarbonate of soda (baking soda) in the dough, so measure carefully with a 5ml measuring teaspoon. Also try not to beat too much air into the dough as it is mixed.
The cookies will also hold their shape better if they are cold when they are baked, as the butter in the dough melts less quickly, giving more time for the structure to set. If your kitchen is warm then it may help to chill the formed cookies on the baking sheet before baking them or bake them from frozen, adding an extra 2-3 minutes to the baking time.
