Is it possible to make the Chocolate Tahini Banana Bread without an egg - i.e. vegan - please? What could I replace the egg with?
Our answer
Nigella's Chocolate Tahini Banana Bread (from COOK, EAT, REPEAT) is a moist cake with the favour of chocolate enhanced by the smokiness of tahini. It is possible to convert this loaf to a vegan recipe but we would mention that it will not rise as much as the version with eggs. However, it still tastes magnificent.
To make the vegan version, omit the egg and increase the banana to 350g/generous 1 cup and the tahini to 75g/⅓ cup. Dark (bittersweet) chocolate chips should be dairy-free and vegan, but we suggest checking the packaging before using.
