Full question
There is a recipe in "Nigella Kitchen" for Thai Chicken Soup which calls for "tender-shoot stir-fry". Is there a US equivalent?
Our answer
Nigella's Thai Chicken Noodle Soup (from KITCHEN) is a soup that uses up leftovers from My Mother's Praised Chicken, or you could use cold roast chicken or turkey. For convenience Nigella suggests using a store-bought mixture of tender stir-fry vegetables. Tender shoot vegetables will cook quickly in the hot broth and make the soup quick and easy to prepare.
Larger grocery stores should offer packages of prepared vegetables for stir-fries but some of these may include firm vegetables such as onions and bell peppers, which would not be suitable. If you need to create your own mixture then we would suggest basing it on bean sprouts (mung bean sprouts). Other vegetables that could be included are baby spinach leaves, thinly shredded bok choy, shredded snow peas, enoki mushrooms or very thinly sliced crimini mushrooms. Canned and drained bamboo shoots are also a possibility and as these are already cooked they just need to be heated through in the soup at the end of the cooking time.
