Can the vermouth in Nigella's Tarragon Salmon recipe be replace by something else?

Nigella's Tarragon Salmon (on the Nigella website) is a simple but delicious dish of pan-fried salmon served with a pan sauce made with 60ml (4 tablespoons) dry white vermouth, herbs and double cream. Nigella often uses vermouth as it is a fortified wine that lasts for a long time once opened and is handy to have in the kitchen to add flavour to various dishes.
You can use dry white wine instead of the vermouth. If you want to avoid alcohol then you could use vegetable or fish stock instead. Make sure that the stock is not too salty as it will reduce quite a bit in the pan and if it is salty then use half stock and half water. If using stock you may also like to add a small squeeze of lemon juice to the sauce before serving it.
