I can't find cream of tartar anywhere locally. Will the beautiful Coconut Macaroons work without it? What difference does it make, please?

Nigella's Coconut Macaroons (from HOW TO BE A DOMESTIC GODDESS) are coconut cookies that are made with a meringue base. The recipe starts by whisking egg whites with a small amount of cream of tartar.

Cream of tartar is an acidic ingredient that helps to strengthen the whisked egg whites so that the meringue is more stable once it has been whisked. This can be important for meringues as it helps the whisked whites to hold their volume, particularly when other ingredients are folded in. It also reduces the risk of the meringue weeping. You probably can make the macaroons without the cream of tartar but they may be slightly sticky. However, fresh lemon juice is a good alternative to cream of tartar and you can use it for the meringue in same amount (1/4 teaspoon).
