Nigella's Cauliflower And Cashew Nut Curry is a fusion of Thai and Indian flavours that gives a delicious vegan dish that is likely to be enjoyed by all. If you can't find Thai curry paste then you can use an Indian curry paste. We would suggest a madras or hot curry paste, as Thai red curry paste is quite spicy, but you could use a milder curry paste if you prefer.

Alternatively, if you wanted to make your own curry paste then you could try the paste from Nigella's Butternut And Sweet Potato Curry. As this paste already contains ginger, we would omit this from the cauliflower curry but still use the spring onions (scallions), cardamom, cumin and coriander (ciilantro) stalks.
