Nigella's Potato, Parsnip and Porcini Gratin (from NIGELLA CHRISTMAS) is a useful Christmas entertaining dish as it can be assembled the day before and kept in the fridge until needed. The parsnips provide sweetness and the porcini mushrooms impart a bosky, umami flavour to the gratin, so it could be served almost on its own, just accompanied by a green salad, as a lunch or supper dish.
Otherwise, the gratin can be served with roast chicken or pork and would be particularly good with roast beef or ham. It could be partially reheated in the oven while the meat is roasting and then given a blast in a hotter oven while the meat rests. The flavour of the gratin may be a bit too strong to be served with a delicate white fish, though it would probably go well with salmon.
