In the Aromatic Lamb Shank Stew it mentions using masala - is this masala wine or garam masala?
Our answer
Nigella's Aromatic Lamb Shank Stew (from NIGELLA BITES) cooks lamb shanks in a broth spiced with cumin, ginger, cinnamon and chilli. The dish also includes marsala and this is marsala wine rather than the spice mixture garam masala (which is spelled differently).
Marsala wine comes in dry and sweet forms and for this dish we would prefer to use the dry version. If you don't have marsala then dry madeira would be the closest alternative, or a darker dry sherry such as Oloroso. If you want to avoid using alcohol then replace the marsala with beef or lamb stock or broth.
