Nigella's Wide Noodles With Lamb Shank In Aromatic Broth (from COOK, EAT, REPEAT) is made with just one lamb shank to serve two people. The meat is cooked until very tender and then shredded and served with noodles, vegetables and the cooking liquor, which makes the meat stretch further than just cooking and serving the lamb shanks as a stew.
A typical lamb shank would weigh 400-450g (14 ounces - 1 pound). Fore shanks (from the front legs) will tend to be skinnier and with slightly less meat than the rear shanks (from the back legs), so if you have a choice then try to buy the slightly meatier rear shank. The recipe was originally written during lockdown as a soul-soothing solo treat with leftovers to eat another day.
