What Is The Yield For The Chilli Jam Recipe?

I tried the Chilli Jam once and it's perfect. I am about to remake this and started reading it again but then I noticed that the quantity is 1.5lts. How did it get to that when your cider is only 600ml? When I made it the first time, it only yielded 1lt.

Nigella's Chilli Jam (from NIGELLA CHRISTMAS) is a condiment made with red (bell) peppers (for colour), red chilli peppers (for heat) and (apple) cider vinegar. The cider vinegar provides acidity to balance the sugar as well as a liquid to set the flecks of peppers in.

The yield for the recipe is given as "approx. 1.5 litres". The reason for this volume only being approximate is that the yield can vary according to the pan you use and how long it takes for the jam to reach setting point. The longer the jam boils for, the lower the yield will be as liquid will evaporate. The rate of evaporation will also be dictated by the diameter of the pan and the surface area of the liquid in the pan. A larger surface area will mean that liquid evaporates faster. The volume of the uncooked ingredients is usually around 2 litres. If the jam gets to setting point quickly then you should get close to 1.5 litres of jam, but it can be less. As the jam should be decanted into sterilised jars, we feel that it is more helpful to give an estimate for the maximum yield as you don't want to find that you have lots of leftover jam and not enough sterilised jars to put it in. Unused jars can always be cooled and stored for another use.
