Nigella's Yule Log (from NIGELLA CHRISTMAS) is a chocolate sponge that is filled and coated in a rich chocolate icing. It is a popular alternative dessert to Christmas pudding and is also gluten free.

The chocolate sponge is baked in a Swiss roll tin and these usually have dimensions of approximately 33 x 24cm (9 x 13 inches). The tins have shallow sides, around 1-2cm (1/2 - 3/4 inch) deep. American jelly roll pans have very similar dimensions or you can use a 9 x 13-inch quarter sheet pan. We suggest lining the tin with baking parchment (parchment paper) even if it has a non-stick lining. The sponge is very tender and it is easier to turn it out of a lined tin and then gently peel the lining paper away from the sponge. It is also a good idea to line the tin with the baking parchment coming a little above the sides of the tin, in case the sponge rises higher than the sides of the tin during baking.
