Really looking forward to making the Liquorice And Blackcurrant Cake for my Mum. Should I use sweetened or unsweetened almond milk? Also would this cake be ok in a springform tin or is it too wet? Many thanks, Sarah

Nigella uses, or gives options for, non-dairy milks in many of the recipes in her new book Simply Nigella. For the recipes, including the Liquorice And Blackcurrant Cake, the non-dairy milk should be the unsweetened and unflavoured variety, unless the recipe specifically states otherwise.
The Liquorice And Blackcurrant Cake is easy to make as the ingredients are simply stirred together. The cake batter is quite liquid which means that solid or fixed base cake tins are most appropriate. Otherwise there is a risk that some of the cake batter seeps out of the bottom of the tins while the cake bakes. Solid base cake pans are easy to find in the US and in the UK and Australia you can find them in some department stores, speciality baking shops or on-line. Wilton and Fat Daddios are two popular brands, and others are also available.
