What to Serve With Patè

Full question
For my party starter I'm looking at making a chicken liver patè. Other than toast, what would you suggest as the ideal accompaniment? Cheers!
Our answer
Toast is traditional with pate and if it is for a special occasion you could serve toast made from challah or brioche (though avoid the overly sweet supermarket brioches). Beyond this the accompaniment could well depend upon the texture of the pate.
A coarser, country-style pate can often be served with some cornichons (small gherkins) or small pickled onions (such as cocktail onions). A smoother, parfait-style pate can be served with something sweeter. An onion marmalade or caramelized onions are particularly good or you could serve it with raisins or sultanas steeped in Pedro Ximenez or sweet Marsala or Nigella's Rich Fruit Chutney from her book Christmas, which is made with dried fruits.
Both types of pate are good with the sweet-and-sour flavours of chutneys. We would suggest trying Nigella's Spiced Apple Chutney from Domestic Goddess or even the Chinese Plum Sauce from the same book. At Christmas cranberry sauce would also be a good seasonal choice, the link to NIgella's Redder Than Red Cranberry Sauce is below.
