Our answer

Nigella's Chilli Jam (from NIGELLA CHRISTMAS) is a spicy condiment that is ideal to make ahead as Christmas gifts or to eat with cheese and cold cuts. The recipe uses cider vinegar, which in the US is usually labelled as apple cider vinegar.

Unfortunately the labelling can be confusing between different countries. In the UK apple cider vinegar is the raw, unfiltered type of cider vinegar, whereas in the US this type is specifically labelled as "raw apple cider vinegar" (or "raw and unfiltered"). It is slightly cloudy as it still contains the "mother". You can use this type of vinegar but it will give a cloudy finish and any of the health benefits of the "mother" are dininished during the cooking process. So for the Chilli Jam do use the clear (filtered) type of (apple) cider vinegar. We can only find one brand of vinegar in the UK labelled as "cyder vinegar" and this comes in two forms - "organic cyder vinegar" and "raw organic apple cider vinegar". If you are looking at this particular product then the "organic cyder vinegar" is the one to use and not cyder labelled as "raw".
