The Rosemary Remembrance Cake sounds lovely, but I confess to being a bit bewildered as to how/when one might serve it. Is it considered to be a savoury cake (e.g. you might it eat with butter and a bit of cheese) or, rather is it more of a sweet loaf to be served, with tea and maybe jam? My inclination is to go with the former... but maybe not?
Our answer
Nigella's Rosemary Remembrance Cake (from FEAST) is a madiera-style loaf cake that is gently scented with rosemary and made moist with the addition of a home-made rosemary-infused apple purée.
We would consider it to be a sweet cake, to be eaten with a cup of tea or coffee and it will keep for a few days in an airtight container to give sweet comfort when needed. Jam shouldn't be necessary and could mask the flavour of the rosemary. The combination of sweet plain cakes and herbs and spices is not unusual and seed cakes, such as caraway seed cake or Nigella's Cumin Seed Cake still remain popular. We would not particularly recommend serving the cake with cheese, but we do note that serving a slice of apple pie with a piece of Cheddar cheese is popular in parts of the UK and the US.
