I was wondering when you add salt to the Roast Duck With Orange, Soy And Ginger?
Our answer
Nigella's Roast Duck With Orange, Soy And Ginger (from AT MY TABLE) are twice roasted. This results in an irresitible combination of tender meat and crisp quackling. The duck is served with a sauce made from ginger, oranges, honey, star anise and soy sauce.
Nigella doesn't season the duck with salt through the cooking stages as the sauce itself is quite well seasoned with soy sauce and salting the duck then adding the sauce at the end could make the overall dish too salty. If you did want to season the duck then we would suggest sprinkling a little salt over the duck and inside the cavity at the beginning of step 1, so some of the salt can penetrate while the duck is coming up to room temperature and before the boiling water is poured over. However, if you are serving the duck with the sauce then we suggest that you don't use too much salt at this stage.
