Nigella's White Chocolate Cheesecake (from AT MY TABLE) is an easy but spectacular no-bake cheesecake made with melted white chocolate, cream cheese and whipped cream. In the recipe, Nigella specifies white cooking chocolate, as this was the label on the packaging of the chocolate.

White chocolate does not contain any dark cocoa solids, but good white chocolate should contain cocoa butter, along with sugar, milk solids and vanilla. What is important for the cheesecake is the amount of cocoa butter used in the chocolate as this is the ingredient that will help the cheesecake to set. We prefer to use a chocolate with cocoa butter (cocoa solids) content of around 30%, or that has cocoa butter as one of the first ingredients on the ingredients list. This may be labelled as "white cooking chocolate" or just as "white chocolate", depending on the brand. Avoid using a white chocolate that has added vegetable oils or any that is labelled as "white chocolate candy".
